Food Structure Symposium to be held at the University of Guelph
The desire to understand the basic tenets of food structure such that rational design of food systems can be achieved has long been (and still is) a strong driving force for research in the field of food science. The interdisciplinary and collaborative nature of such research requires professional interaction and open discussion between representatives from various disciplines (from physical science to biology) and sectors (from industry, academe and government). Now, the University of Guelph's Department of Food Science, one of Ontario's premier food science research institutions, will be hosting a meeting with just such an end. This meeting will be the fourth and latest installment of the Delivery of Functionality in Complex Food Systems series of symposia, first held in 2005 at Lausanne, Switzerland. This meeting will bring together world-class experts from various fields to discuss the latest and ongoing trends in food structural research. This symposium will also provide a valuable opportunity for representatives from Canada's food industry, government regulatory agencies and academe to build ties with some of the world's leading experts in this area of endeavour.
