How to Judge Cheese
It’s fair to say that judging cheese is similar to wine tasting, says Art Hill, professor and chair of the Department of Food Science.
Dr. Hill was one of 40 cheese experts from 17 countries selected to judge the World Championship Cheese Contest held in Madison, Wisconsin in March. The experts, drawn from industry and academia, gathered to assess the merits of over 2500 cheeses from 24 countries in the biannual competition sponsored by the Wisconsin Cheese Makers Association.
A Cheese Making Technology short course is offerred each May for a limited number of participants.
