SIMON DAY

School of Hospitality & Tourism Management
Simon is a dedicated culinary professional with over twenty years practical experience in large scale, fast paced restaurants and hotels across Canada and the Caribbean. After completing an apprenticeship with Delta Hotels, Simon attained his Red Seal and Journeyman's ticket from the Southern Alberta Institute of Technology.
His industry experience includes positions with Movenpick, Oliver's, Sonesta Hotels and SIR Corp. Most recently opening Leoni's, a three hundred seat fine dining Italian restaurant in the heart of Toronto's theater district.
Simon joined the facility in the Fall of 2003 after teaching culinary skills at private colleges in Ontario. He is currently instructing the restaurant operations course in the new Atrium dining room. As well he will be conducting the fine dining course in the winter.
