Brief biography/comments

Dr. MacLaurin was born on a farm/ranch in Kansas and received her primary and secondary education in Kansas and Colorado. Before joining the faculty of the School of Hospitality and Tourism Management in 1991, Dr. MacLaurin focused on a successful practitioner career in the dietetic, sensory evaluation and foodservice industries.

Courses taught

  • Undergraduate courses: Cultural Aspects of Foods and Economics of Food Usage
  • Graduate course: Safety, Security and Risk Assessment at the University of Guelph.

Throughout her academic career, Dr. MacLaurin has delivered 17 different courses in four countries (US, Canada, Singapore and Australia) in the areas of food, food service management, food safety in the hospitality industry, quantity food production and management, international business, nutrition applications for foodservice, sensory evaluation of food, new food product development, and principles of food science.  Dr. MacLaurin delivers workshops on sensory evaluation of food, and food safety certification training for the food and food service industries.

Research areas of interest

Research interests focus on food safety, safety and security in tourism, culinary tourism, new hospitality and tourism product development utilizing sensory evaluation, and foodservice management.
