Food Scientist to Be On Canada AM

Prof. Massimo Marcone will be featured on CTV's Canada AM Wednesday morning discussing his latest book Aquired Tastes: On the Trail of the World's Most Sought-After Delicacies.
The food scientist travelled the globe in search of the gourment and sometimes grosteque dishes that are highly-sought after by different cultures such as mite-infested cheese, putrefied shark and a luxury tea that requires the leaves be digested and excreted by moth larvae before brewing,
Once he has tracked down these delicacies, Marcone investigates the science behind what make their tastes unique.
His most recent book, which is a sequel to his book In Bad Taste?" The Adventures and Science Behind Food Delicacies, has been featured in the Toronto Star. Marcone will also be discussing his book on Breakfast Television March 16.
