Some cultivars with a soft skin, matured in a warm climate can be eaten raw. Processing is manyfold, because of the intensive flavour mixed products are preferred: juices pure and mixed, liqueurs, wine, fruits in liqueur, jam, marmalade, jelly, and dried jelly as a special "quince-bread". Years ago the slimy seeds were a drug. In India and China different parts of the quince tree play a role in folk medicine(1). |
