The fruits of the newer cultivars contain over 50% of fat; (Oleum Helianthi annui) cold expressed is a good edible oil, heat expressed for technological use. The seed cake is a valuable fodder. The seeds are eaten fresh or roasted and also used as birdseed; the stems are used as a source of cellulose and for the production of fibre mats. Pectin is obtained from the receptacle and straw. The young flower-heads are also eaten as a vegetable.(1) |
