The University of Guelph has a federally inspected Meat Science Laboratory (“Meat Lab”) located in the Department of Animal Biosciences.  The purpose of the Meat Lab is to provide a means for teaching and research in all aspects of meat science. The Meat Lab is licensed to slaughter, cut and process the major red meat species along with processing poultry, and is also licensed to manufacture ‘Ready to Eat’ meat products. The University of Guelph is seeking applicants to fill the Meat Lab Manager position.  This position is responsible for working in the facility and managing the day-to-day operations of the facilities and equipment along with supervising staff and all users of the University of Guelph Meat Laboratory.

Reporting to the Chair of the department, the role is responsible for:

  • Meat Laboratory operations and enabling efficient provision of services for University of Guelph faculty, staff and students and outside industry groups
  • Providing day to day administrative duties for the Meat Lab including scheduling all activities and assigning staff 
  • Overseeing the hiring, training and supervision of full-time, part-time staff and casual staff
  •    Working on the harvest floor and is involved in carcass fabrication and grading, and meat processing
  •  Performing all tasks related to livestock harvest, carcass fabrication and grading, and further meat processing as needed
  • Developing the Meat Lab budget in collaboration with the Administrative Officer and the Department Chair
  • Overseeing activities of the Meat Lab including financial transactions, work orders, purchase orders, time keeping, etc.
  • Involved in Industry Extension such as hosting and organizing workshops on advancements in the meat industry

Requirements of the position include:

  • Bachelor’s degree in Agricultural Science with a major in Animal Science and/or Meat Science and a minimum of one (1) year of experience in the industry managing slaughter operations and/or carcass fabrication, or an equivalent combination of education and experience
  • Industry knowledge of meat production and processing techniques that include slaughter (harvest) of specific red meat species, carcass fabrication, meat quality evaluation, fresh meat and ready-to-eat processing  
  • A good understanding of HACCP and ensuring food safety
  • Ability to operate all relevant meat processing equipment
  • Demonstrated experience related to human resources management and supervision of staffWell-developed organizational, analytical, and problem-solving skills, with an approachable demeanor
  • Ability to multi-task and troubleshoot
  • Strong interpersonal and communication skills (oral and written) with the ability to interact in a positive and supportive manner
  • Ability to conduct themselves with a high degree of tact and diplomacy
  • Strong computer knowledge, including experience with PowerPoint, Word, and Excel
  • Previous experience in developing budgets
