Guelph Grad Story: Food Product Innovator, Aleana Chao

Blend Science with Food Innovation.

Do you love food? Do you also love science? If you do, you might find yourself walking the same path as Aleana Chao, a proud 2022 graduate of the University of Guelph’s Food Science (co-op) program. Today, Aleana is a product developer at Chudleigh’s Bakery, a commercial bakery known for its delicious desserts and deep roots in Ontario’s agricultural community. But her story began much earlier—in high school, where her passion for food and curiosity about science first collided.

Gain Career Experience Through Co-op

Aleana’s passion for food and science guided her decision to enroll in the University of Guelph’s Food Science program, a move that would set the stage for a fulfilling and innovative career.

At U of G, Aleana’s academic journey was anything but ordinary. Her co-op experiences played a pivotal role in shaping her career. From conducting literature reviews and analyzing fatty acid profiles of milk samples, to collaborating on research reports for the Dairy Farmers of Ontario and presenting at conferences, Aleana gained hands-on skills in research and data analysis. These experiences not only deepened her knowledge but also built her confidence in applying science to real-world food challenges.

Why Choose Food Science at U of G

Aleana discovered her true calling in product development during her co-op term as a project manager of the Student Experiential Hot Sauce Project through the Guelph Food Innovation Centre (GFIC).  She assisted in developing a wide variety of products from vegan and keto ice creams and non-dairy alternatives (such as yogurt and milk), to snacks bars, chocolate, sauces, and beverages.

“I learned about what product development really was,” says Aleana. “I even worked with businesses to overcome their scientific challenges in product development to make their products come to life. I had the best people in their field to learn from which set me up for great success in finding a job after graduation.”

Leading and organizing a team of over 40 students, she brought hot sauce products from concept to shelf. From planting and harvesting chili peppers to formulating prototypes and scaling up production, her leadership shone. She even engaged with local media to promote the product launch, showcasing the multi-faceted skills she’d developed at U of G.

Food Innovation at Chudleigh’s

After graduating, Aleana’s passion for food and baking led her to Chudleigh’s Bakery, where she continues to innovate. Her role as a product developer involves everything from brainstorming and pitching new product ideas, sourcing ingredients, formulating and refining recipes, conducting shelf-life testing, and solving industrial-scale problems. Her creations in the lab have ended up being some of the most popular products offered at Chudleigh’s. Aleana’s work is as diverse as it is rewarding, and she credits her co-op experiences and the hands-on learning opportunities at U of G for preparing her for success.

“Chudleigh’s has been an amazing place to apply everything I’ve learned and continue growing as a food scientist,” Aleana adds.
