Let's get cozy!

We are conducting a clinical trial in Dr. Amanda Wrights lab out of the Human Nutraceutical Research Unit, looking at lipid emulsion droplet physical state on postprandial lipemia and satiety in healthy adult participants. The lipid droplets have to be maintained at a temperature of 37C (body temperature) in either the solid or liquid physical state prior to consumption or they could destabilize and crystallize. If our participants hold the jars with bare hands, or it is kept out at room temperature, there is potential for heat exchange, leading to this destabilization. Therefore, we made these very scientific homemade jar cozies to insulate and protect our lipid beverage.
