Research Summary: This project uses advanced Artificial Intelligence (AI), enhanced with Retrieval-Augmented Generation to help keep meat processing plants safe and clean. This Large Language Model (LLM) will be able to identify and track critical control points to ensure that food safety standards are being upheld. The project will collaborate with deli meat processors to gain real-time and historic data to train the LLM. Additionally, the analysis performed by the LLM-RAG system will look for opportunities to improve food production and reducing compliance deviations. While the project is focused on meat production, this approach and tool could help with safety in other kinds of food production too.
