Learn what it takes to create delectable chocolate from bean to bar.

  • Learn the steps to create your own chocolate bar from the cocoa bean
  • Improve your ability to taste for flavour and texture
  • Recognize how roasting time and temperature influence flavours
  • Learn about cocoa butter crystallization and how to manipulate it during tempering
  • Gain knowledge of the fermentation process
  • Understand how the emulsifier impacts the final product

Schedule:

8:00AM - 5:00PM, November 15, 16, 17, 18

 

Cost:

$1,200.00 plus HST
Includes lunches, refreshments and all lab supplies.
