January 31: HTM Professor Optimizes Fine Wine Sales and Inventory Productivity

Professor Joe Barth, School of Hospitality and Tourism Management, addressed 80 members of the Canadian Society of Club Managers at McMaster University on January 30th.  He presented his new revenue management statistic that can be used to optimize fine wine sales and inventory productivity.

The new model has been accepted by the International Journal of Hospitality Management for publication in a forthcoming issue. The model draws on concepts from retail science, menu engineering and yield management that enable managers to improve the performance of their wine programs.
