The cider industry in Ontario is no longer a scene full of start ups. Most of the existing cidery's have at least a couple of years under them now and are now slowly moving away from extremely experimental ciders, each of them finding their own niche. Revel Cider started by making ciders with botanicals, fruits, and new yeast strains from their friends at Escarpment Labs. They have since moved to 100% spontaneously fermented cider, their farmer is on the road to Organic Certification and they are also making significant amounts of Perry and Wine, in addition to their cider.
The Wine & Spirit Education Trust (WSET) Level 1 in Wines is an entry level qualification providing a straightforward introduction to wine. It is ideal for boosting the confidence of new or inexperienced front line staff in the hospitality and retail sectors. This introductory course in beer education is designed for participants interested in furthering their knowledge and interest in beer. The focus will be on brewing ingredients and processes, tasting concepts, pouring and serving concepts (including an introduction to draught systems) and food and beer pairings. The course starts on October 14th and will run for 4 weeks on Sunday's. The deadline to apply is September 26th.
