Broccoli Salad

Ingredients 

  • 1lb broccoli
  • 1/2 cup red onion
  • 1/3 cup dried cherries
  • 1/3 cup sunflower seeds
  • 2 tbsp sunflower oil
  • 1 1/2 tbsp white vinegar
  • 1/2 cup yogurt
  • 1 tbsp honey 
  •  salt and pepper to taste

Directions

1. Wash and chop broccoli and red onion. Place in a large bowl with dried cherries and sunflower seeds.

2. Whisk together sunflower oil, white vinegar, yogurt, honey, salt and pepper.

3. Pour dressing over other ingredients and toss well.

4. Cover, and refrigerate for 2 hours before serving.

OAC Dean's Office staff tried this for themselves and offered up a few suggestions:

  • Substitute other dried fruit such as cranberries or raisins.
  • Use any type of yogurt (greek, sheep, goat) or non-dairy yogurt substitute.
  • Add feta cheese (crumbled or cubed) for additional flavour.
